  • 1 cup diced rhubarb

  • 1 cup peeled and diced tart apples

  • 1/4 cup local honey

  • 1 tsp cinnamon

  • 1 1/2 cups rolled oats

  • 1/2 cup whole wheat flour

  • 1/2 cup chopped walnuts


Preparation

Instructions:


  1. Cook rhubarb and apples in a saucepan with honey and cinnamon until soft.

  2. Combine oats, flour, and walnuts in a bowl.

  3. Press half the oat mixture into a greased baking pan. Spread the fruit mixture on top, then cover with the remaining oat mixture.

  4. Bake at 350°F for 30 minutes. Cool and cut into bars.
