Ingredients:
1 cup diced rhubarb
1 cup peeled and diced tart apples
1/4 cup local honey
1 tsp cinnamon
1 1/2 cups rolled oats
1/2 cup whole wheat flour
1/2 cup chopped walnuts
Preparation
Instructions:
Cook rhubarb and apples in a saucepan with honey and cinnamon until soft.
Combine oats, flour, and walnuts in a bowl.
Press half the oat mixture into a greased baking pan. Spread the fruit mixture on top, then cover with the remaining oat mixture.
Bake at 350°F for 30 minutes. Cool and cut into bars.
